TOM’S TOP PIZZA DOUGH RECIPES: GLUTEN SHOWDOWN EDITION

No matter which side of the gluten-free fence you find yourself on, chances are you’ll agree with us on this: pizza is amazing—provided you start with the right crust. So without further ado, here are two of our favourite pizza dough recipes, which we believe cover all the bases: one for the beer-loving crowd, and another for gluten-free fans of the pie. Tom’s beer-infused pizza dough

It’s no secret that a pint of beer is the beverage par excellence to accompany a slice of pie (or five), but we can do you one better: beer inside your pizza. Enough said.


What you’ll need

• 2-1/2 cups multi-purpose flour

• 1-1/2 cups whole wheat flour

• 2-1/2 tsp. instant yeast

• 1 tsp. baking powder

• 1-1/2 tsp. salt

• 2 tbsp. olive oil

• 1-1/2 cups room-temperature beer


Put it together

1. Dissolve the yeast in the cup of warm water until it becomes foamy (about 5 minutes).

2. Combine all the ingredients in a bowl.

3. On a lightly floured surface, knead for about 10 minutes.

4. Form dough into a smooth ball and return to bowl. Cover with a kitchen towel and let rise until volume has doubled, about 1-1/2 hours.

5. Heat oven to 450 °F.

6. Divide risen dough in half and form each half into a 10-inch flat circle.

7. Place crusts onto parchment paper-lined baking sheets (or pizza stones).

8. Bake until top is dry, about 8 to 10 minutes.

9. Top pizzas to your liking and bake for another 10 to 12 minutes.

10. Let cool for 5 minutes, then slice, serve and enjoy.


Tom’s gluten-free pizza dough

Whether it’s an allergy or a health-conscious decision, some of us simply can’t stomach good old gluten. But humankind is an industrious species, one that bows before nothing when it comes to getting what it wants. And what it wants is pizza for all.


What you’ll need

• 1 cup warm water

• 2 tsp. instant yeast

• 2 cups gluten-free multi-purpose flour

• 1-1/2 tsp. salt

• 1/2 tsp. baking powder


Put it together

1. Dissolve the yeast in the cup of warm water until it becomes foamy (about 5 minutes).

2. In a medium bowl, whisk together the flour, baking powder and salt.

3. Using a wooden spoon or spatula, make a well in the centre of the flour mixture. Pour the water and yeast mixture into the well and stir to combine.

4. Stir for about 5 minutes, until the dough is smooth, then shape it into a ball and return to bowl. Cover bowl with a towel and let stand to rise at room temperature for 30 minutes.

5. Heat oven to 450 °F. On a piece of parchment paper, press dough into a thin, even 10-inch circle. Parbake until the top is dry, about 8 to 10 minutes.

6. Top crust to your liking and bake for 10 to 12 more minutes.

7. Let cool for 5 minutes, then slice, serve and enjoy.
